Rumford Baking Powder Recipe Cookbooklet, 1931
Giving Delicacy and Flavor to Daily Cooking by the New Use of Rumford, published by The Rumford Company, Rumford, RI in 1931.
Striking Art Deco styling and 1930s graphics throughout provide a new way of looking at baking powder -- its use in cooking vs. baking. The Rumford Company hired "well known food specialist" Miss Bertha M. Becker to carry out tests on more than eighty different dishes in her New York laboratory. The results, based on the opinion of this "outsider, an unprejudiced expert," are printed in this cookbooklet, thirty that were of "sufficient merit to be put before the American housewife!"
In an attempt to provide an international flair, The Rumford Company chose recipes such as Philippine Goulash, Creole Rice Cakes, Potato Lutkies, and American Chop Suey alongside favorites like Tomato Hamburgs and Salmon Croquettes, all benefiting from the unusual addition of baking powder.
Sized at approximately 6 5/6" x 4 3/4" with 28 pages. Some minor creases and discoloration.
What an interesting experiment -- baking powder in everyday meals to give delicacy and add flavor. Give it a try!
